The salad like best, especially “ready for use” – The Republic

Salad? Versatile than ever, like more and more. Ideal as an appetizer or as a side dish for lunch and dinner embodies the well-being cuisine which is now a strong awareness in more people.

The salad – or, better, salads, given the many varieties – is now an integral part of the diet of more than 18 million households and provides service mode and consumption evolving. It is certainly not new, but in recent years is constantly increasing the clearance by the consumption of salads bulk to that of packaged, so-called IV range, namely vegetables subjected to minimum technological processes to ensure the hygienic safety, ready for consumption . Only last year, 3 out of 4 consumers have chosen and purchased packaged salads, an increase of 4.2 percentage points over the last three years (it has gone from -6.1 percent in 2012 to 1.9 in 2015 ). So much so that in January this year, consumers of bagged salads outnumbered those salad loose.

The latter showed a negative trend especially in the traditional channel (-5.2 for singing value and -5.1 percent in volume compared to 2014) and local markets (-4.9 percent in value and -7 percent by volume), typical locations for the purchase of fruit and vegetables.

Every year 300,000 new families buy salads and vegetables ready for use: in the year ending in May 2015 they were consumed 89,300 tonnes (up 2.7 percent over the previous year) for a value of 633 million euro (+1.3 percent). Each family spends an average of 34 euro, with 18 purchases per year (source: Nielsen).

In the shopping cart of Italians there are, therefore, increasingly capable bagged salads need Healthy consumers accompanying it with saving time in the kitchen and the reduction of waste, also a considerable cost.
